The hedgehog mushroom is perhaps one of my favorite-looking edible mushrooms. For spore-bearing structures, this mushroom has quill-like spikes pointing down from its cap instead of the more common gills. These spikes are likely what gave the hedgehog mushroom its name. Often-rounded caps are held up by thin solid stalks, while the mushrooms uniformed yellow-orange brings fall to mind. Hedgehog mushrooms have a warm buttery flavor with an occasional peppery note and a firm texture and could best be compared to the chanterelle in both flavor and price. What I think puts the hedgehog just a notch ahead is its durability and a lower tendency to pick up dirt and pine needles as it grows. This makes preparation and cooking faster and easier. Whether you’re an experienced mushroom cook or just discovering the world of mushrooms, this is one you don’t want to pass over.
