Fresh Yellowfoot (Winter Mushroom)
Yellowfoot (Winter Mushroom) are a small, thin mushroom with a yellowish-brown cap and bright yellow stem and a close cousin to the chanterelle. While not as fruity as the chanterelle, the winter mushroom is more powerfully flavored with a unique peppery taste, especially when raw.

Origin: Pacific NW, USA
Shelf Life: Winter mushrooms are best consumed within two weeks when fresh, a year when frozen, and a year and a half when dried.
Tip: Their thin quality allows the winter mushroom to easily absorb flavors and fits well in a variety of dishes. Consider chopping them up and putting them in a soup or sauteing them with garlic and onion and pair with meat.
