White Truffle Oil
White truffle oil isn’t for cooking; it’s a finishing oil, like the higher grades of olive oil used to add more flavor to a dish before serving. White truffle oil is used to enhance foods by adding to them after preparation. The oil adds nuance and subtlety to any dish. With light tones of garlic and pepper, it is best in more simple dishes than you would use black truffle oil on. Lightly drizzle over white meats and fish, eggs, potatoes, or simple pasta dishes such as macaroni and cheese. Truffle oil is commonly used to make truffle fries, which feature French fries tossed in truffle oil, Parmesan cheese, pepper, and sometimes herbs like chives, tarragon, and thyme. Spread a little bit around your pizza crust and turn a piece that sometimes gets thrown out into your favorite part of the meal.
