Fresh Organic Shiitake Mushrooms have traditionally been a symbol of longevity in China due to their many health benefits. Fresh shiitakes have a savory, toasty aroma and flavor with a juicy, succulent texture. While the stems are edible, they are typically removed and prepared separately as they are much more dense than the caps and take longer to cook.

Shelf Life: Fresh organic shiitake mushrooms are best when used within two weeks when fresh and a year when frozen or dried.

Nutritional Facts: 100 grams of cooked mushrooms contain only 60 calories, 14 grams of carbs and no fat or cholesterol. But what’s even better than what they don’t contain is what they do have inside of them. Shiitake mushrooms are full of copper (45% RDA*), selenium (35% RDA), Vitamin B5 (35% RDA), Vitamin D (25% RDA), and zinc (15% RDA), as well as smaller amounts of other vitamins and minerals. You can even dramatically increase the existing amounts of Vitamin D by sun-drying your mushrooms before you use them. Copper produces red blood cells while selenium primarily keeps your thyroid and immune system healthy. Zinc also keeps the immune system healthy and is responsible for building protein and DNA. Additionally, Vitamin B5 converts food into energy and Vitamin D helps the body absorb calcium and builds strong bones.

You can pair our fresh shiitake mushrooms with ingredients like wild leekssea beans, basil, bacon, soy sauce, edamame (soy beans), garlic, onions, herbs (particularly rosemary & sage), balsamic vinegar, spinach, asparagus, miso, tofu, poultry, pork and bell peppers. Our shiitake are usually clean upon arrival, but you may clean them gently with a damp paper towel or a soft-bristled brush to remove dirt if necessary .
